Custom wiring with a special touch

I want to make a special set-up with my Strat and I'm not sure how to start becuase the standart wiring is complicated way different than I imagined.

The sceme is this: a main volume knob, a main tone knob and, instead of a tone knob for the middle pickup, a three-way switch. The three-way switch would have this setting: 1st position is "normal mode", middle position is "off" and the 3rd position is "all single coil mode" (it would include all the pickups except the second pickup in the humbucker).

What should I do? Is it simple to do or what?
